Mock Tender comes from the shoulder and is similar to a chuck roast; however, it is much more lean. It has a rich and beefy flavor.
Mock Tender is best cooked at low heat and braised with liquid to avoid chewiness and to keep it from drying out.
This cut is great for stew meat, stews and soups.
