Due to the Christmas and New Year holidays, we are running modified schedules. 3 Day Select deliveries are postponed and will resume the week of January 6th. Please note that deadlines for 1 Day and 2 Day shipping have been moved to Friday @ 7 am for Christmas and New Years week. The next delivery for Pennington NJ and Chalfont PA will be on Friday January 3rd. The usual Thursday schedule will resume after that. The farm is closed on December 25th and 26th, so there will be no farm pick ups on those days. Goat Cottage Cheese is temporarily discontinued due to the goat milk shortage that naturally occurs this time of year. Check for availability in January.

Ghee

A Lactose Free Butter Alternative

Ghee is one of our favorite things we produce at the farm! Ghee has its origins thousands of years ago in Southeast Asia and has been used by the Indian culture for cooking and medicine.  That does not mean you can't use ghee in your every day life!  It is a highly versatile and useful addition to everybody's pantry.  Read on to find out how!

We make our ghee from our own grass-fed, A2/A2 butter which makes it highly nutritious. We also make ghee from our very own grass-fed Water Buffalo milk.  Ghee is made by melting butter and removing the milk solids. We remove our milk solids carefully by hand. Our ghee has little to no lactose in it which makes it a great butter alternative for those who have lactose
allergies and cannot have butter.

Ghee can be used in every day cooking. It has a neutral yet nutty flavor. Ghee has a high smoke point of about 465 degrees Fahrenheit which makes it great for high temperature cooking in situations such as roasting veggies or searing meat.  It is a much healthier alternative to vegetable oils and seed oils.

Ghee has a long shelf life. An unopened jar of ghee has a shelf life of one to two years. An open jar of ghee can last three months unrefrigerated. An open jar of ghee will last over a year if kept in the refrigerator.

As mentioned before, make ghee from our genetically tested A2/A2 cow milk and our naturally A2/A2 Water Buffalo milk. Our cow ghee has a beautiful golden color while our Water Buffalo ghee is bright white from the white fat of the Water Buffalo milk.

Here are a few of the different ways ghee can be used in your everyday life:

-Butter or oil substitute for baking cookies, cakes and pie crusts

-Popping popcorn

-Melt it and put it on top of popcorn or veggies

-Use it for roasting veggies or meat

-Sautee veggies, seafood, meat

-Spread it on muffins, biscuits and breads

-Melt it into dressings as an oil substitute

-Use as a butter substitute for frosting

-Greasing pans

    Many people don't realize that the FDA requires butchers to spray raw meat with citric acid to slow the growth of bacteria on meat that naturally occurs. The citric used does not come from natural citrus fruits. Instead, it is manufactured using a fermentation process that includes a mold that eats the sugar of corn. Citric acid is the byproduct of the fermentation process. Instead of citric acid, our FDA approved butcher uses an organic apple cider vinegar and water spray.
